Triple Chocolate Chip Ice Cream Pie

When it comes to NESTLÉ® TOLL HOUSE® Cookies, I can never refuse them. They’re my downfall. Can you blame me? These cookies are by far my favorite. Honestly, there has been times that I could just eat a batch of these baked chocolate chip cookies right from the oven all by myself. But you know the deal, the kids smell the delicious aroma from the kitchen and that’s all it takes.

One of many reasons why I love baking chocolate chip cookies especially for my family is because it’s such a versatile dessert. You can use chocolate chip cookies in so many different ways. Just like the other day. I was heading over to Publix to pick up a few items for dinner and thought of baking cookies. With summer still in full swing, I wanted to make a dessert that would give my taste buds something to brag about and that is when I thought of my Triple Chocolate Chip Ice Cream Pie. I’ve made it on a few special occasions. It’s so scrumptious!

So while shopping I noticed the new NESTLÉ® TOLL HOUSE® Cookies & More Cookie Baking Mix with Semi-Sweet Chocolate Morsels in the baking aisle. Normally I would have walked right by that aisle but thank goodness for my sweet tooth because I also noticed they also have NESTLÉ® TOLL HOUSE® Cookies & More Cookie Baking Mix with Butterfingers. They also had NESTLÉ® TOLL HOUSE® Brownies & More with Butterfingers and Brownies & More with Chocolate Morsels. You guys, my eyes got real big so I picked up all four of these new baking mixes. -And you know what? I just signed up to Ibotta recently so I got a cash back rebate for purchasing the Nestle Toll House Baking Mixes. Umm, hello? I swear it was my lucky day. It was a win-win for me!

Nestle Toll House Baking Mix is so simple to prepare. For the Cookies & More Cookie Baking Mix with Semi-Sweet Chocolate Morsels, I only needed one egg, a half cup of butter, and a tablespoon of water to mix the ingredients together. Super easy! Do you know what also makes my heart happy? Even after 75 years of baking experience, Toll House never disappoints me. There is still no artificial flavors or colors in their cookie baking mix. NESTLÉ® TOLL HOUSE® Cookies & More Cookie Baking Mix with Semi-Sweet Chocolate Morsels is one baking mix with so many possibilities. That is why this new baking mix allowed me to easily add all my personal touches that my family loves.

Toll House Cookie Baking Mix

My Triple Chocolate Chip Ice Cream Pie is no exception to the rule. It’s pure delightful to taste on a summer day. It’s all of my cravings wrapped up in one dessert. -And who says chocolate chip cookies are boring? Not this mom. It’s the perfect dessert that your family and friends will love.

Cookies and More Nestle Toll House

First, I prepared the NESTLÉ® TOLL HOUSE® Cookies & More Cookie Baking Mix with Semi-Sweet Chocolate Morsels as directed on the box and preheated my oven to 375 degrees.

I baked the chocolate chip cookies to a golden brown. Insanely delicious by the way. After baking and the cookies were “cool”, I placed 6-7 moist cookies inside my processor to ground into crumble pieces for the chocolate chip cookie crust.

Once the chocolate chip crumbles were in the pie dish, I placed it in the oven for 5-10 minutes until the crust started to dry out. I removed the crust from oven and let cool completely. While your crust is cooling, take a small saucepan and add three tablespoons of bittersweet chocolate morsels, two tablespoons of unsalted butter, and three tablespoons of light corn syrup. Place your saucepan on low heat to make your ganache. Stir until melted then remove from heat and cool.

Before assembling your pie, remove your ice cream from the freezer at least 10 minutes prior. Once your ice cream has softened, scoop ice cream over your chocolate chip cookie crust. Spread with a spoon until you have a layer of ice cream covering your crust. Add a few broken pieces of your chocolate bar, chocolate morsels, and cookie crumbles then spread a layer of ganache over the ice cream. Repeat these steps.

I can’t even begin to tell you how much my family loved this Triple Chocolate Chip Ice Cream Pie. After patiently waiting for the pie to fully set, they were so pleased with the taste. I mean what’s not to love about it? Every little nook and cranny of this pie are immersed in Nestle Toll House Chocolate Chip Cookies. This is one pie that will keep you cool in the summer and you can refreeze the leftovers.
