Tomato and Sweet Bell Pepper Flatbread

When I first noticed the Fresh from Florida label on produce, it was during a shopping trip at my local Publix store. At first I didn’t give it much thought until one day at home when I was searching the internet for an ingredient in a recipe. -And that is when I started putting the puzzle together. “Wow”,  I had no idea at that time that Fresh from Florida had a website full of amazing recipes for in-season fruits and vegetables. The recipes were incredible. So needless to say, I became very fond of the website and also loved helping support my local farmers during each season.

I found recipes like their Tomato and Sweet Bell Pepper Flatbread. It’s a quick and easy meal to make for my family. -And not to mention, extremely tasty to eat!  What enticed me more about that recipe was when I noticed that it came from the Fresh from Florida website. Using fresh local ingredients always makes my heart happy.  I know from my own experience, using in-season vegetables in my recipes can make a world of difference in flavor. So I just knew that this recipe would be a hit and it sure was!

Not only does purchasing produce that is labeled with Fresh from Florida help support my local Florida farmers but it allows me to prepare meals for my family with the freshest vegetables and fruits from my own surrounding communities. I love to stock up on my favorite in-season sweet bell peppers and sweet corn when they’re on sale.

I take pride in knowing that my local Florida farmers make sure their crops are fresh from the farm to the table. In-season fruits like blueberries and watermelon are not hard to find here in Florida. You’ll find them at the best prices when they’re  in-season too!

Locating the Fresh from Florida label is simple to find and our local farmers make sure of it. Just visit a local grocery store such as Publix and head to the produce department. You’ll instantly find many signs that edge each fruit or vegetable that current is in-season. You can’t miss them!

I have to agree with many Floridians when I say, one of the reasons why I love living here is having the opportunity to enjoy in-season Fresh from Florida fruits and vegetables year round.  You can instantly taste the difference. It’s so fresh and crisp!

 

 

 

 

In-season produce

According to the crops in season list, sweet bell peppers, blueberries, sweet corn, and watermelon are all in-season . This would be a great time to visit the Fresh from Florida website and try one of their recipes. In the meantime, follow this easy recipe tutorial and try their Tomato and Sweet Bell Pepper Flatbread for yourself.

For this recipe you will need:

  • Flatbread
  • Two Fresh from Florida- Sweet Bell Peppers (sliced thin) Green and Yellow
  • One Juicy Tomato (sliced thin)
  • Garlic (sliced thin)
  • Mozzarella Cheese (cubed & shredded)
  • Olive Oil
  • Basil Leaf (whole)

 

Begin by spreading olive oil and thin garlic slices on your flatbread. Next, add mozzarella cheese. Don’t hold back now! We love mozzarella cheese so that’s why I used shredded and cubed pieces for my Tomato and Sweet Bell Pepper Flatbread reicpe. Hint: use a block of mozzarella cheese for convenience.

Take one green and one yellow Sweet Bell Pepper and slice them in thin strips. Add each pepper on top of the shredded mozzarella cheese.

In the meantime, preheat your oven to 350 degrees Fahrenheit.

 

 

Place your thin-sliced tomatoes on top of the peppers and sprinkle shredded mozzarella cheese on top. So simple!!

Bake for 8 minutes or until you see the cheese bubbling then you know it’s time to remove from the oven.

Cut into square slices, then garnished with fresh basil then serve hot.

Tomato and Sweet Bell Pepper Flatbread can be a meal time favorite. It’s a perfect meal to serve for lunch or dinner.

Ingredients

  • Flatbread
  • Two Fresh from Florida- Sweet Bell Peppers (sliced thin) Green and Yellow
  • One Juicy Tomato (sliced thin)
  • Garlic (sliced thin)
  • Two cups of Mozzarella Cheese (shredded)
  • Olive Oil
  • Basil Leaf (whole)

Instructions

  1. Spread olive oil over the flatbread.
  2. Add thin garlic slices and shredded mozzarella cheese.
  3. Next add thin strips of sweet bell peppers.
  4. Preheat the oven to 350 degrees.
  5. Place thin-sliced tomatoes on top of the sweet bell peppers then sprinkle mozzarella cheese.
  6. Bake until cheese is bubbly. About 8 minutes.
  7. Garnish with basil and serve hot.
