One morning after a broken night’s sleep, I woke up craving Chocolate-Chip Cookie Muffins. The idea came into place when I was dreaming of melted chocolate chips, cookies,  a tall glass of milk and, muffins.  It’s pretty amazing what the brain craves and desires, isn’t it? Well anyway, I woke up with cookies n muffins on the brain so I had to raid my cabinets to get my ingredients together.

Luckily, I had what I needed. Chocolate-Chip Cookie Muffins is like having the best in both worlds. -Plus it’s a great excuse to eat chocolate in the morning considering muffins are often served during breakfast or brunch.

 

Chocolate-Chip Cookie Muffins

 

Preparing my Chocolate-Chip Cookie Muffins from scratch is effortless guys, it’s so simple. I will warn you, be prepared for your kitchen to smell heavenly. Ahh, the baked goodies will make your kitchen smell like you walked into a bakery. Oh, how I love that smell. If you’re looking for a chocolatey muffin without worrying if the chocolate chips will land on the bottom of the batter then this recipe is for you!

Let’s do this!

For this recipe, you’ll need.

  • All-Purpose Flour
  • Light Brown Sugar
  • Sugar (white)
  • Baking Powder
  • Salt
  • Milk
  • Butter (melted)
  • Eggs
  • Vanilla
  • Semi-Sweet Chocolate Chips

 

 

 

Begin by preheating the oven to 400°.

In a large mixing bowl, add and stir together 2-cups of all-purpose flour, 1/3 cup of light brown sugar, 1/3 cup of white sugar, 2 teaspoons of baking powder, and 1/2 teaspoon of salt.  Whisk dry ingredients together.

Take another bowl then add, 2/3 cups of milk, 2 lightly beaten eggs, 1/2 cup of melted butter, and 1 teaspoon of vanilla.

Make a hole inside of dry ingredients then add milk mixture. Stir together. Lastly, hand-stir in one 11oz package of semi-sweet chocolate chip morsels.

Spoon batter in prepared muffin cups. I used baking spray before placing in muffin baking cups. The batter mixture will be thick.

Bake for 15-20 mins or until golden brown. Remove from the oven and cool before serving.

 

 

Shortly after the Chocolate Chip Cookie Muffins were cooled, I heard mysterious noises coming down the stairs. -And I get from my son, oh, mom what did you bake? Needless to say, I’m glad this recipe makes 12 muffins because this mom did get to enjoy herself one before all the troops came marching in.

I will say this, my husband was pretty smart about saving himself one. You’ll never guess where he hid his? Are you ready for this? Right on the counter with a sign that read, don’t touch, love dad. Now if I did that, mine would be gone with the note still on the counter. Boy, dads have it easy. But we’re thankful for him either way.
