Can’t decide on what to do with your Thanksgiving turkey leftovers? Try my Turkey Pesto Panini. It’s an absolute dream!

 

 

We’re only weeks away from one of my favorite holidays, Thanksgiving. I don’t know about you, but I can’t stop thinking about turkey leftovers. Is it just me? I know it’s been a long year of waiting, but Thanksgiving leftovers are simply the best!  It’s been so bad that I actually been daydreaming about it. In my opinion, having leftover turkey ready to eat the day after Thanksgiving, gets my heart pumping!

So that is why I couldn’t resist making a JENNIE-O® OVEN READY™ Boneless Turkey Breast. I just couldn’t wait for the big day to come and I was craving Turkey Pesto Panini sandwiches. It’s like having all the delicious flavors wrapped up in one sandwich. My family goes totally insane when I make these sandwiches. But what I love the most about cooking JENNIE-O® OVEN READY™ Boneless Turkey Breast is how easy it is to cook. I don’t have to worry about carving the turkey around bones or waiting hours for a turkey to thaw. I can take right out of the freezer and place it right in the oven. No waiting, no hassle, it’s a stress-free method of cooking and what’s not to love about that.

TURKEY PESTO PANINI

 

Turkey Pesto Panini Recipe:

  • JENNIE-O® OVEN READY™ Boneless Turkey Breast
  • One Cup of Pesto (Homemade or Store Bought)
  • French Bread Store Bought (Cut in four pieces)
  • Mozzarella Cheese (Slices)
  • 3 Roma Tomatoes (Sliced thin)
  • 1 Avocado (Peeled, Sliced, then Mashed)
  • Olive Oil

 

Begin by heating one tablespoon of olive oil on a grilled pan or panini presser. For my recipe, I used an electric panini presser. Spread two tablespoons of pesto on both sides of the sliced french bread then top one side with mozzarella cheese, JENNIE-O® OVEN READY™ Boneless Turkey Breast slices, sliced tomatoes, and avocado mixture. Then top the other side of the french bread. Repeat this step with the remaining slices of bread.

Place your sandwich on the grilled pan until the bread is golden and cheese has melted. About 3-4 minutes per side.

Ingredients

  • JENNIE-O® OVEN READY™ Boneless Turkey Breast
