Sweet Thai Asian Chicken Lettuce Wraps along with Pineapple Boats are two my favorite meals to cook for my family. Usually with these recipes I will include ground turkey and Asian seasoning but when I heard about Mighty Spark Food Co. now being sold at Publix stores, I couldn’t wait to try it!

What’s amazing is how each unique flavor  can replace ground beef in any recipe. Especially those boring recipes that need a kick of flavor like stuffed peppers, or Asian Chicken Lettuce Wraps.

 

Asian Chicken Lettuce Wraps

 

Asian Chicken Lettuce Wraps are a go-to meal for me. It’s a quick weeknight meal that makes me feel good after I eat. Did you know that Mighty Spark’s Sweet Thai Ground Chicken is seasoned with cilantro, shallots, and honey? It’s so full of flavor that no other seasoning is needed. It’s perfectly flavored the way it is.

Cooking Mighty Spark’s Sweet Thai Ground Chicken can be done on the grill, in a skillet, or baked in the oven.  For my Sweet Thai Asian Chicken Lettuce Wraps & Pineapple Boat recipe I decided to use a skillet. So much easier cooking it on the grill and in under 20 minutes too!

 

 

When I tried Mighty Spark’s Sweet Thai Ground Chicken for the first time I didn’t know what to expect. But after that first bite, I could instantly taste the flavor and difference from plain ground chicken.

My Asian Chicken Lettuce Wraps are made with:

  • Romaine Lettuce Leaves
  • Mighty Spark Food Co. – Sweet Thai Ground Chicken
  • Soy or Sweet n Sour Sauce for taste

 

 

In a medium sized skillet on medium to high heat, add one package of Mighty Spark Food Co. Sweet Thai Ground Chicken. Scramble the ground chicken and brown each side for 14-18 minutes.

Take one romaine lettuce leaf then add three good sized helpings of Sweet Thai Ground Chicken. Serve warm and if desired add your favorite sauces.

 

 

 

 

Pineapple Boat 

My pineapple boat recipe is simple to make on a lazy summer’s afternoon. It doesn’t require too much time in the kitchen since only a few steps and ingredients are needed. Let’s get started!

You will need:

  • Mighty Spark Food Co- Sweet Thai Ground Chicken
  • Fresh whole pineapple (cut in half)
  • White rice (steamed)
