You guys, I’m so excited for the holiday season. This year, we will be celebrating our first Christmas in our new home and I can’t even begin to say how excited that I am. Christmastime has always been an exciting holiday season from me and my family. But there is one thing that I dread and it’s being in the kitchen more than I have to.

Let’s be honest, it’s never fun when you’re missing out on creating new memories with your family members. So that’s why I started to spend less time in the kitchen as much as possible. Especially during Christmas.

One of my crowd favorites to serve during the holiday season is Roasted Veggie Bruschetta. Ahh, it’s so delicious! I believe it’s been a hit because I use the freshest ingredients along with our favorite cheese made with Real California Milk.

 

For many of my homemade recipes like Roasted Veggie Bruschetta, I instantly look for the Real California Milk seal on packages. It might sound weird but it’s something that I’ve been doing for quite some time now. I feel great about purchasing food items once I see the label on a variety of dairy products. When I buy products with the seal, I’m getting real food from real people and kissed by the California sun. Roasted Veggie Bruschetta

When I first tried Roasted Veggie Bruschetta, I was hooked. Normally, Bruschetta is not topped with cheese but just fine Italian seasonings, and diced tomatoes. But there was that one day when I tried this recipe with shredded Queso Blanco cheese. Literary was a game-changer.

 

For this recipe, you will need

  • Red onions (sliced thin)
  • Fresh Corn Kernels
  • 2 Red Bell Peppers
  • 1 tablespoon of Chili Powder
  • 1 Orange Bell Pepper
  • 4 Tomatoes (chopped)
  • 3 Olives (sliced)
  • Minced Garlic
  • Lime Juice
  • Baguettes (sliced)
  • Real California Queso Blanco cheese (shredded)
  • Salt for taste

Begin by preheating your oven to 450° degrees. In a lined baking pan, add one cup of fresh corn kernels, 1/2 cup of thin-sliced red onions, one teaspoon of olive oil, one tablespoon of chili powder, pepper mixture, and a pinch of salt. Bake for 25-30 minutes until mixture is caramelized. In a large bowl, add in sliced olives, minced garlic, cumin, and lime juice. Combine with pepper veggie mixture and marinate for one hour.

Roasted Veggie Bruschetta

 

Take a slice of baguette bread then add Roasted Veggie Bruschetta mixture. When it comes to cheese, I’m super friendly so the more shredded queso cheese the better so add as much as you’ll like. Bake for four minutes or until cheese has melted. Serve warm from the oven.

Ingredients

Instructions
