I don’t know about you, but simple summer meals like my recipe for Roasted Garlic & Cracked Black Pepper Pork Loin Gorgonzola Salad is a bonfire hit with my family. It’s easy to prepare under 30 minutes,  Smithfield Marinated Fresh Pork  is succulent and a perfect addition to this salad. How can you go wrong? You simply can’t and I’m going to tell you how it’s done.

Preparing and cooking weekday meals becomes time consuming as you know, especially in the summer and who really wants to spend that extra time in the kitchen? Definitely not me.  I know for myself, I look for quick meals like a Gorgonzola Salad to feed my family. It’s healthy, versatile, and makes a perfectly light dinner.

Being always on the go, and entertaining friends during the summer months, my first choice in foods is grilled meats. Nothing gathers your family and friends more than socializing around the grill.  That is why I love cooking Smithfield’s Marinated Fresh Pork on the grill. -And being that it’s already marinated it also saves me time and I love that. It’s real flavor, real fast.

Do you know what else saves me time and money? Shopping for Smithfield Marinated Fresh Pork  products in the fresh meat section at Safeway. It’s a no-brainer! During the summer when I head to my local Safeway, I always make sure I stock up on Smithfield Marinated Fresh Pork .


Have you tried Smithfield Roasted Garlic & Cracked Black Pepper Pork Tenderloin before? Their pork tenderloin is beyond delicious. It’s so tender and practically melts in your mouth. At Safeway, you can find many different varieties such as Sweet Teriyaki Pork Tenderloin, Roasted Garlic & Herb Pork Loin Filet, and Slow Smoked Mesquite Flavor Pork Loin Filet.

I will attest.  I have grilled them all and absolutely loved each one.



When grilling marinated meats especially pork, you want to savor the juicy flavor and not over cook it. I found coating the grill (when cold) with non-stick vegetable spray helps release the meat off the grate. Also, turning the meat every 2 or 3 minutes until your pork tenderloin reaches an internal temperature of 145 degrees is ideal.

Both these tips are important to know when you want to lock in real flavor, real fast.



Preparing a Gorgonzola Salad is pretty effortless. For my recipe, I used a variety mixture of green lettuce. Such as arugula, kale, red romaine, spinach, and chard.

While my pork tenderloin was resting I decided to slice my grape tomatoes and cucumbers. Another great tip is to add Gorgonzola crumble cheese, slices of fresh pears, and top it off with sliced almonds. Once your salad is ready, you can begin slicing the pork.



Place your sliced Roasted Garlic & Cracked Black Pepper Pork Tenderloin on top of your Gorgonzola Salad and if desired, serve with your favorite salad dressing.

Roasted Garlic & Cracked Black Pepper Pork Loin Gorgonzola Salad

  • Smithfield Marinated Fresh Pork- Roasted Garlic & Cracked Black Pepper Pork Tenderloin
  • One Green Lettuce Mixture Bag
  • 1/2 cup Grape Tomatoes (sliced thin)
  • 1/2 cup of Gorgonzola crumble cheese
  • One large English Cucumber (sliced)
  • One sliced Fresh Pear
  • 1/4 cup of sliced Almonds
  • Salad dressing (if desired)


  1. Preheat grill.
  2. Place Smithfield Roasted Garlic & Cracked Black Pepper Pork Tenderloin on the grill.
  3. Turn the meat every 2-3 minutes until your pork loin reaches an internal temperature of 145 degrees.
  4. Cook and let pork rest.
  5. In a large bowl, add your green leaf salad mixture.
  6. Slice thin 1/2 cup of grape tomatoes, a fresh pear, and one large English cucumber. Add to the lettuce.
  7. Next sprinkle 1/2 cup of Gorgonzola crumble cheese, and sliced almonds.
  8. Add your choice of salad dressing and serve.
