Easy Mini Upside Down Pineapple Cakes

 

Easter is this weekend and you still have plenty of time to make my Easy Mini Upside Down Pineapple Cakes.  Not only can they be individually served after dinner but will be a perfect addition for your dessert table.

Just think, under 25 minutes these delicious cakes can be prepared, baked, and ready to be served to your guests. Simple and so tasty!

Wouldn’t you say that Upside Down Pineapple Cakes are a staple dessert for many households during Easter? I certainly think so. I remember as a child going to my grandmother’s house and seeing her homemade pineapple cake. Oh my lord it was so good! These days, we are baking machines in the kitchen especially during special holidays like Easter. -And you know what else we do? Use shortcuts when we need too.  I see nothing wrong with using a few shortcuts to save myself some  time in the kitchen. In fact, that is exactly what I did for this recipe. I only used a few ingredients and one was from a box.  I know shame on me, but easy recipes should always be well, easy. Am I right?

 

 

You will need:

  • One box of Vanilla Cake Mix
  • Eggs and water (according to box instructions)
  • One cup of light Brown Sugar
  • Two Tablespoons of Butter
  • 1/4 cup of Melted Butter
  • 1/2 cup of tidbit Pineapples
  • Whipped Cream as Topping
  • Maraschino Cherries to garnish
  • Mini Fluted Baking Pans

 

 

First preheat your oven according to directions on the cake box. For the mini pans that I used in this recipe, I preheated  the oven to 350 degrees and baked for 15-18 minutes.

Take one tablespoon of butter and coat your pan. Using butter instead of non-stick baking spray gives your upside down pineapple cake a moist texture and  a buttery taste.

Grab a small mixing bowl and place in one cup of light brown sugar then add 1/4 cup of melted butter. Blend both ingredients together.

Next, add one tablespoon of your sugar mixture and spread it on the bottom of your fluted pan. Top it off with 3 tidbit Pineapples.

 

 

Scoop your vanilla cake batter in your pan and leave 1/2 inch from the top. Doing so will allow your Mini Upside Down Pineapple Cakes to rise. Bake for 15 minutes.

Ingredients

  • One box of Vanilla Cake Mix

Instructions

  1. Preheat your oven according to directions on the cake box.
  2. Coat your baking pan with butter.
  3. Mix vanilla cake mix according to the box packaging.
  4. In a small bowl, add one cup of light brown sugar and 1/4 cup of melted butter. Blend sugar-butter mixture together.
  5. Scoop one tablespoon of sugar mixture in your fluted pans and spread mixture.
  6. Add 3 tidbit pineapples.
  7. Scoop in vanilla cake batter mixture. Leave 1/2 inch from the top.
  8. Bake for 15 minutes.
  9. Remove your pineapple cakes from the oven and let cool completely.
  10. Before serving add whipped cream on top and garnish with a cherry.

Upside down Pineapple Cake

 

Remove your pineapple cakes from the fluted pan and let them cool completely. Before serving, add whipped cream on top then garnish with a Maraschino Cherry.  The perfect individual dessert that the whole family will love this Easter.
