Do you celebrate Cinco De Mayo on May 5th? We always try to celebrate by hosting a few friends over with a night of good laughs, a few glasses of margaritas and of course, Mexican foods. Oh, it’s the best!

Last spring my husband and I took our family to Mexico on a vacation and we absolutely loved it! We had the best time time tasting new foods, learning about the Mexican heritage,  and indulging in some adult beverages. We did learn somethings while we were there. Just like, the people of Mexico were extremely friendly and very talkative. There was time during our stay when the celebration of Cinco De Mayo was brought up. Little did I know at the time that Cinco De Mayo is celebrated quite differently here in the U.S. then in Mexico. I believe it or not, Cinco De Mayo in Mexico is not about sipping cocktails and eating tons of tacos, it’s actually a day to celebrate the victory over the french empire.

It might sound like a tiny victory to many but it was huge day for the people of Mexico.

One of the things that I like to do when preparing to celebrate Cinco De Mayo is to pick up all my essentials before the big day. We love cooking Mexican foods at home and at times I believe that we go overboard and make way too much. Which is actually good because normally we have tons of leftovers. One of my all-star recipes that I fell in love with in Mexico was a Turkey Cornbread Casserole. My husband calls it a side dish but I like to call it a meal in itself. It begins with ground turkey that is seasoned with taco seasoning mix then topped with cornbread. It’s delicious as is or topped with chopped tomatoes. What’s great about this dish is you can reheat it the next day and it still tastes amazing!

For this recipe you will need:

  • 1 Pound of Ground Turkey
  • 1 Pkg of Cornbread mix (bake according to box directions)
  • 1 Packet (1 oz.) of Taco Seasoning

 

 

Begin by preheating your oven to 400°F. In a medium skillet, cook then combine ground turkey, and taco seasoning. Cook turkey until brown and follow directions according to the taco seasoning packet. In a medium bowl, prepare one package of cornbread mix along with the ingredients needed on the box.

Take your cooked ground turkey crumbles and place it inside a 9 inch square glass baking dish. Next, scoop cornbread batter over the ground turkey. Bake for 10-15 minutes or until cornbread is brown and set. Serve hot with chilled tomatoes or salsa.
