Lately, I have been on a cucumber kick. For the past two weeks, I have had such a craving for these healthy vegetables.  From salads to sandwiches, I’ve been finding new ways to satisfy my palate.

 

If you love easy recipes that are delicious and so easy to make, then this right here is what you need to try.

For being low in calories, these appetizers will be a bonfire hit at your next party or gathering.

When I was searching for new ideas, I found a recipe that was simular. I don’t know about you, but I love to make foods that don’t take much time in preparing and this recipe is perfect for those who have a busy lifestyle and need to make a quick tasty appetizer.

 Tips:

I found that cutting your cucumbers lengthwise was so much easier to cut in squares. Doing so makes these bite size appetizers desirable to hold.

Because cucumbers come in various sizes, I tried to cut them in the same length of size to make them even.  Placing a toothpick does keep them together and formed.

When I shredded the chicken in my food processor, it took less time and you use less mayo. You will notice that it appears dry at first, just keep mixing and you soon see the mayonnaise absorb in.

    These sound wonderfully light and refreshing! I often put slices of cucumber on my chicken salad sandwiches, and I love the idea of using the cuke as the bread instead! These would make a great appetizer for a party. :)
