Don’t put that grill away too fast because football season is here! My family and I love to grill year round especially when it comes to tailgating. Heck, we even use our grill when we have a watch party at my home with friends. Anything goes when it comes down to our love for grilling and college football. Spicy foods are a must for us to the serve on game day. In fact, we wouldn’t have it any other way. Usually, if we are attending a football game at the stadium I prepare our “tailgreatness” the night before.
Keeping all my tailgating favorite foods and essentials together is important for us. It allows us to enjoy the game without the worries. There have also been times that I prepare a few days before especially if we’re having friends over for a watch party. It’s all about preplanning when it comes to food.
One of the issues that I have when it comes to serving food to my friends and family is worrying about them suffering from heartburn. Especially my poor husband. I feel so bad for him. Anything that he eats that’s spicy, saucy, or has a little “kick” to it, he suffers almost right away from heartburn. On some days, it will strike during the day even after his dinner from the night before.
Do you or know someone who suffers from heartburn? Honestly, I feel so bad because my husband loves foods that are spicy and he insists on not giving them up. That is why I always try to plan ahead and make sure my husband has Nexium® 24HR on hand. For my Spicy Meatball Grilled Cheese sandwiches, I decided since we are grilling for the college football watch party that I would put these unbelievable delicious meaty sandwiches right on the grill. I mean, what’s a grilled cheese sandwich without being grilled right?
I can’t even begin to tell you how amazing they are on the grill. Trust me, you will get lost for words after one bite. Especially when you spread butter and grated parmesan cheese on the 5-grain Italian bread slices. Goodness me, it is so good!
-And do you know what’s even better? Slow cooking these spicy meatballs. Oh, yea! It’s not an official watch party until something that is amazing is simmering in the crockpot. Wouldn’t you agree? It’s like these two go hand to hand in my book.
Making these meatballs are so simple it’s silly. For starters, you will need ground hamburg, eggs, breadcrumbs, sliced provolone cheese, and crushed red pepper flakes. A few pinches of salt and pepper then you should be good to go.
Here comes my less favorite part, rolling the hamburg into meatballs. Now don’t get me wrong, I love the taste of meatballs but rolling them can be so time-consuming but hey, I shouldn’t complain because they’re worth it in the end.
There are so many different ways to add the crushed red pepper flakes to the hamburg but for my recipe, I decided to spread the flakes on my cutting board and then roll the meatballs. Allowing the crushed red pepper flakes to cover them evenly. -Plus, some of the flakes fall right into the sauce which makes the sauce taste even more desirable.
Now that you have the meatballs all wrapped up in spicy flavor, it’s time for them to take a swim in the crockpot. I used store bought jar pasta sauce for this recipe to save me some time in the kitchen. -And you know what? Saving time in the kitchen rocks! Any time saved is worth it on before game day.
Typically, cooking meatballs in the slow cooker will take a few hours on high heat. Normally for me, it takes about three hours.
As the meatballs are almost cooked, I started to prepare my sandwich bread. I absolutely love 5-grain Italian bread. I honestly find it so appetizing than just regular sandwich bread. It tastes amazing!
Anyhow, butter is my new best friend lately so spread a pat of soft butter on top of each slice. Remember, we’re grilling so make sure you spread the butter evenly.
Next, take your grated parmesan cheese and sprinkle it on top of the butter. You want to make sure that each slice is covered.
Now that your meatballs are fully cooked, take one slice of your 5-grain Italian bread with your butter side facing down and add your meatballs. I placed whole meatballs instead of cutting them in half although either way will work. Grab a slice of provolone cheese and place it on top of your meatballs. Take your second slice, place it on top with the buttered side facing up. Now is a good time to pre-heat your grill on low to medium heat.
Oh, it’s grilling time baby! Make sure that you have your grill spatula handy because you will need it! Carefully flip each side of your sliced bread until each side is golden brown and your cheese is fully melted. I flipped the sandwich only twice. About 2 minutes on each side.
-And finally, before kickoff begins, find yourself a good seat around the television. I don’t know about you but standing throughout your watch party is no fun. So claim your spot early. Also, make sure that you have all your other foods and drinks close by. Doing so allows you to enjoy the game without leaving the room.
