For me, spending any extra time with my family is important. Each of us are so busy during the weekday which makes it difficult to sit together at the same time and enjoy a good meal. Between work, school, college and after school activities, are schedules so hectic right now.
As a mom of four, I feel that I’m constantly going, going all day long. Can you relate? From the moment my feet reach the floor in the morning to the minute I crawl into bed at night. On many days, I have to wake up early to get most of my housework done and it’s all done in a days time.
It gets so overwhelming because after carpooling every day, preparing dinner, homework and lunches for the next day, it’s time to do it all over again which doesn’t leave us for much time to other things that we like to enjoy.
With the Holiday season approaching, our schedules are even more limited so creating short cuts or hacks with dinner seems to be the best alternative in giving us more time to spend together.
While I was shopping at Walmart the other day, I decided to pick up a few things for dinner. I came across Walmart’s Deli Prepared Meals which is a no brainier when your short on time with making dinner. I just knew the Rotisserie Chicken would be perfect to have in my homemade taco bowl salad.
Did you know that Deli Prepared Meals like their Marketplace Pizza, Rotisserie Chicken, Potato Salad, Cole Slaw served along with 2-Liter bottle of Coca-Cola, takes little or no time at all. It’s a quick meal that takes no effort and saves you so much time.
You know what makes these Walmart Deli Prepared Meals even more desirable? Every Walmart Deli Prepared Meal purchased with Coca-Cola in the months of November and December will support Coca-Cola at Walmart in providing a meal to families in need through The Salvation Army. By doing so, this will allow families in need to enjoy the Holidays together with a warm meal. In my opinion, this is what the Holiday Season is all about. Giving back and providing happiness to others.
My shredded Rotisserie Chicken Taco Bowl Salad recipe is one that my family truly loves. It’s a healthier choice than using hamburger which you’ll find in most taco bowl salads. Adding some of our favorite toppings like shredded lettuce, fresh diced tomatoes, mexican cheeses, sour cream and topped with scallions is pure delightful!
I will say when you have picky eaters in your household like I do and you see your kids loving it, it’s certainly one recipe that you don’t mind making. Go me!
I began to shred Walmart’s Rotisserie Chicken into a large bowl. By using a fork, I started to pull apart each section of the chicken into small pieces. I found that shredding the chicken takes less time and is easy enough to place inside of my homemade taco bowls.
My taco bowls are a big hit within my family. The kids love having their own individual size crispy taco bowl that’s filled with fresh tomatoes, lettuce, sour cream, shredded mexican cheese and of course tender rotisserie chicken.
I’ve had the taco bowl molds for quite some time now but you can find them in most retail stores.
Start by spraying your molds with cooking spray then place down your small soft burrito or fajita shell inside the mold. You can also use soft corn tortilla shells as well. Bake for 10 minutes at 350 degrees.
We like our taco bowls to be slightly warm and crispy which makes them easier for the kids to tear off and scoop up that delicious shredded chicken, lettuce, tomatoes and cheese. Don’t let these bowls fool you. They can certainly hold all of your ingredients together without making a soggy mess.
