Yesterday was national Pi Day and boy, do I have a special treat for you. Since St. Patrick’s Day is also this week, I couldn’t resist myself with making a no-bake creme pie by using Lucky Charms Cereal. My kids go crazy over Lucky Charms so hiding a box of this magically delicious cereal was not easy but I did it. The first thing the kids said was, “Mom, I had no idea you bought Lucky Charms Cereal”. I returned by saying if I told you then there would be no pie. (hahaha) Needless to say, they were considerable pleased about the pie and how it came out.
Luckily when I saw this limited time edition box of Lucky Charms with the gold and green shamrock marshmallows, I couldn’t resist with choosing it.
This no-bake pie was so easy to make and honestly, only takes a few hours to chill before serving.
The key ingredient is one box of Lucky Charms of course. You won’t be using the whole box but pretty close to it.
First I started to separate the Lucky Charm marshmallow shamrocks from the frosted oat cereal. This recipe calls for 4 cups of Lucky Charms Cereal, 2 cups of Lucky Charms Marshmallows, 8oz of Cream Cheese, 1 1/2 cups of Marshmallow Fluff, 8 Tablespoons of melted Butter, 1/2 cup of Powder Sugar, and Cool Whip for topping.
Sounds pretty simple right?
Next I placed 4 cups of Lucky Charms Cereal inside my food processor. It took only 15 seconds to pulse when using my Ninja appliance. In the end, you want the cereal mixture consistency to result in crumbs which will make a terrific pie crust.
On the next step I melted 8 Tablespoons of Butter in a microwaveable container. Once melted, slowly pour your butter in the cereal crumbs. Continue to stir until mixture is moisten and formed together.
Start pouring your mixture in your pie dish. By using a spoon, pat down until the base of your baking dish is covered all around. Place in the freezer while you’re preparing the filling.
In a large bowl, combine your Lucky Charms Marshmallow Shamrocks, Marshmallow Fluff, Cream Cheese and Powder Sugar together. Blend well.
Begin by pouring your pie filling mixture on your chilled crust. Covering all areas on top of your pie crust. Smooth out with a spoon or spatula. Scoop then spread your desired amount of Cool Whip on top of your filling then add the remaining Lucky Charms marshmallows around the rim of your dish.
Freeze overnight or refrigerate for two hours until you’re ready to serve.
