Catchin’ The Waves Kid-Friendly Summer Snack

catchin' the waves

Summer is finally here! I’m so thrilled to be lucky enough to enjoy with my family. Keeping the kids busy is no easy task but I have fun plans for all of us to enjoy and I can’t wait! One of the things that have been on my mind lately is keeping my family on the right path of their eating habits during these months. I’m not one for counting calories or checking every label on a box but I will say when I see new products that are gluten free then I gotta try it. I am so impressed by brands like General Mills take that initiative to keep the same great taste in the cereals that we already love and now make them gluten free. It surely will be a gluten free Summer for us.

These days people are choosing the best foods for their growing families and with General Mills adding gluten free to their Chocolate Cheerios®, Lucky Charms® and now our favorite Cinnamon Chex™ cereal, we have so many reasons to smile during snack time.

That’s right, for us it’s not just about having a bowl of cereal in the morning,  it’s about snacking on our favorites.  -And with using cereals in a recipe the fun only begins. Don’t you agree? You can place cereal toppings on your ice cream and desserts. -Plus adding a handful or two to a bowl with pretzels or granola oats, you got yourself a great snack! So when I thinking about making my children a fun treat the other day with using Cinnamon Chex ™ Gluten Free cereal, all I could think about was lazy Summer days at the beach. A quick and simple snack that would amazing when using Cinnamon Chex™ in my Catchin’ the waves fun recipe.

Do you know what’s even better? While shopping at Publix, I noticed BOGO deals on General Mills cereals. So it was a win-win for this mom. Before checking out the cashier told me about the digital coupon that could help me save more. I was like, heck yeah! Saving an adiitional $1.00 off 2 boxes of my favorite gluten free cereal had me doing a happy dance.

Have you tried Cinnamon Chex™ yet?  Oh my goodness it’s so good. It has no artificial colors, flavors, or high fructose corn syrup. It tastes amazing. I can’t forget the new Chocolate Chex™ either. My kids are going nuts over it. I’ve had Chex™ before but both of these flavors brings a new light to snack on or morning breakfast.

For my fun Catchin’ the waves recipe you will need:

  • 1 1/2 Cups of Cinnamon Chex™ (Crumbles)
  • Blue Gelatin (Store bought)
  • Gummy Rings (For beach rafts)
  • Parasol Umbrellas
  • Clear Plastic Cups

First, I began to prepare my blue gelatin as directed on the box. Usually, it will take 3-4 hours to refrigerate and form before serving.

While my blue gelatin is forming, I placed one and 1/2 cups of Cinnamon Chex ™ gluten free cereal in my food processor until the cereal is fine and in crumbles. The objective is to make enough to place in the bottom of your clear plastic cups.

Once your blue gelatin is firm remove it from your refrigerator. Begin to add spoonfuls of the gelatin on top of the crumbles until it’s completely covered.  Give your cup a little shimmy shake to get your gelatin to rest easy and resemble waves from the ocean. Next, grab a few gummy rings and place them on your blue gelatin. Add your parasol umbrella and enjoy!
