On Friday, something “rare” happened to my husband and I. We were home alone without our kids for dinner. I know what you’re thinking, just run and have yourself a ball. As working and always on the go parents, this doesn’t happen too often. Wouldn’t it be nice if it was just that easy? Of course but in case, we had no intentions of dining out or didn’t plan on having a date night since we knew that the kids would be home within a few hours. So for us, it wasn’t worth the struggle of getting dressed and going out for dinner. So that is when we decided to have a quiet dinner at home for the two of us.
Since the clock was ticking, I decided to make Apple Stuffed Pork Chops for dinner. Can you say delicious? Apple Stuffed Pork Chops are truly one of my favorite meals to make during the Fall. Do you know what’s even better? This recipe doesn’t take much time in the kitchen either.
My husband loves when I sautee’ or simmer apples for a recipe. Guys, I’m telling you, it’s the best. Anyhow, I wanted to start preparing our meal right away and that is when I turned to my husband and asked, what side did he want with the Apple Stuffed Pork Chops. Of course, he had to of said mashed potatoes. I looked at him like, what are you thinking? The last thing that I wanted to do was peel potatoes then wait for them to boil before mashing. Then it hit me, I picked up two packages of Idahoan Signature Russets at the store. I remembered that I grabbed them because they were new. Perfect timing right? I was short on time and I knew that Idahoan Signature Russets would be excellent to serve as a side dish. -And, do you know what? I am so glad that I did. These mashed potatoes were so delicious.

Usually, when it comes to mealtime especially Sunday dinner, it’s the gold standard as it’s the one day of the week when you’re most likely to go “all out” and prepare a great-tasting meal. New Idahaoan Russets mashed potatoes are so delicious that – when served as part of a weekday dinner – it makes “any day taste like Sunday.”

For my Apple Stuffed Pork Chop recipe, you will only need a few ingredients and steps. So let’s get started.
Grab your cast-iron skillet and melt two and a half teaspoons of butter over medium heat. Add one large chopped apple ( I prefer Lady Apples but you could substitute with any apples on hand like Mcintosh), and a half cup of chopped red onion. Cook until apples and onions are tender. About 10 minutes. Next, add your minced garlic and cook for 1 minute. Remove from heat and add chopped rosemary, honey, salt, and pepper. Stir and let cool for 10 minutes. Now is a good time to pre-heat your oven to 400° degrees.
While your apple filling mixture is cooling, take your thick-cut pork chop and evenly cut the side to make a pocket. Spoon the apple mixture into the pockets. Take your pork chops and gentle rub olive oil on them. Remove any extra apple mixture from your skillet and place aside.
Clean your skillet then add one tablespoon of olive oil and cook your pork chops over medium to high heat. Once both sides are brown (4 minutes each side), top your pork chops with apple slices, red onions, and rosemary sprigs.
Keep your Apple Stuffed Pork Chops in the skillet and bake for 40 minutes.
Once you have let your pork stand for 10 minutes, drizzle honey on top then serve.
I will tell you, I’m so glad that we decided to stay in for dinner instead of going out. Having Idahoan Russet Potatoes on hand saved me so much time in the kitchen making my meal.
