Did you know that National Cheese Lover’s Day is coming soon? Oh yeah , mark your calendars, it’s January 20th. A day that cheese lovers rejoice! I honestly wouldn’t know what to do if there was no longer cheese in the world. It really makes a huge statement on many different recipes. Cheese is so yummy, wouldn’t you agree?

Take pasta. What would we do without grated parmesan, ricotta, and mozzarella cheese? Cheese certainly does make any simplified food dish taste better.

So with Cheese Lover’s Day approaching, I can’t think of a better recipe to share with you than my Hasselback Garlic Chicken with Mozzarella Cheese and Tomatoes.

Have you tried making Hasselback Chicken before? So simple to make,  but I’m totally non-judgmental if you haven’t. Any recipes with the word hasselback has people going crazy lately. You might have even seen a recipe or two for Hasselback Potatoes (yum, by the way)  floating around the internet. It really has become a crazy for foodies.

Anyhow, Hasselback Garlic Chicken with Mozzarella Cheese and Tomatoes is a recipe that you could whip up in no time. It honestly takes less than 30 minutes to prepare and another 30 minutes to bake. -And what’s pretty awesome about it is you can pair it up with pasta, over salad and vegetables.

You will only need few ingredients to get you started. So make your shopping list now!

  • Whole Mozzarella Cheese (Sliced)
  • 4 Boneless Chicken Breast
  • 2 Medium Slicing Tomatoes
  • Fresh Basil Leaves
  • Minced Garlic
  • Extra Virgin Olive Oil
  • Italian Dry Seasoning
  • Salt and Pepper

 

Let’s get started. Pre-heat your oven to 375° degrees.

Begin, by cutting your tomatoes and mozzarella into slices then setting them both aside. The best way to prepare for your hasselback boneless chicken breast is making at least four slits on top. Here is a tip, you don’t want to cut all the way down but cut enough so you can coat your chicken with minced garlic and add the rest of the ingredients inside your chicken.

 

 

Once you have 4 slits on top of your chicken, it’s time to “stuff” but first, brush 1/2 teaspoon of minced garlic inside the slits of the chicken.

Take one small slice of mozzarella cheese, one half slice of tomato, one basil leaf and stack them together. Place all ingredients inside of the chicken slits.

In a small bowl, add two tablespoons of extra olive oil and one tablespoon of Italian dry seasoning. Whisk and blend well. Now take a pastry brush dip it inside your olive oil mixture and brush it on top of the chicken, mozzarella cheese, and tomatoes.  Place the “stuffed” hasselback chicken in your baking pan, sprinkle salt and pepper for taste and bake for 30 minutes.

Instructions

  3. With using a knife, cut the top of the chicken breast. You will need four slits in each chicken that you're preparing.
  4. Next, take one small slice of mozzarella cheese, one half slice of tomato, one basil leaf and stack them together.
  5. In a small bowl, add two tablespoons of extra olive oil and one tablespoon of Italian dry seasoning. Whisk well.
  6. Take a pastry brush and brush on the minced garlic in the chicken. Now brush on the oil mixture on the chicken, mozzarella cheese, and tomatoes.
  7. In your baking pan, add your Hasselback Garlic Chicken with Mozzarella Cheese and Tomatoes. Sprinkle salt and pepper for taste.
  8. Bake for 30 minutes. Remove from the oven.
  9. Serve warm and enjoy!
