When it comes to gift giving, I get totally lost. Especially if it’s not a family member. I have no idea what the person needs, already has, or doesn’t like. Either way, his co-workers are exchanging gifts this year. Nothing too fancy but they must keep the cost of the presents under ten dollars. Wait a minute, didn’t you say baking? Oh yes, I did! These chewy half-dipped semi-sweet chocolate sugar cookies are truly a staple in my household come the holiday season. -And you better believe these cookies will be the best gift at my husband’s Christmas party this year. Do you know what the best part of making these yummy half-dipped chocolate sugar cookies? You only need a few ingredients. They’re so easy, it’s silly.
First, you will need two cups of white sugar, two 1/2 cups all-purpose flour, one teaspoon of baking soda, two teaspoons of vanilla extract, two eggs, 1/2 teaspoon of salt, one 1/4 cups of margarine, one cup of semi-sweet chocolate chips and one teaspoon of canola oil.
Place your dry ingredients in large bowl and whisk well. Next, add your two eggs, two teaspoons of vanilla and one 1/4 cups of margarine. Blend well with a hand mixer until formed.
Once your dough is formed, take a piece of wax paper and place your sugar cookie dough on top. Form the dough into a large roll and place in the fridge for 15 minutes. I always find that my homemade cookie dough is best when I refrigerated it before baking.
Now is a great time to pre-heat your oven to 350° degrees. Remove your dough from the refrigerator and slice. Next, hand-roll the cookie dough into balls. Take your baking sheet and add your cookie dough to it.
Bake for 11-13 minutes or until your sugar cookies edges become lightly brown. Let your cookies cool completely.
While your cookies are cooling, take one cup of semi-sweet chocolate chips and one teaspoon of canola oil and place them both in a medium-size microwave-safe bowl. Microwave for 15-30 second intervals and continue to stir in-between until your chocolate is melted and smooth.
Dip your cooled cookie into the melted chocolate. You want to dip the cookie in an angle to cover half the cookie. Place your cookie on wax paper and sprinkle green or red sugar crystals on the other side of the cookie.
