With Valentine’s Day only a few weeks away, it’s the perfect time to start thinking about that special someone who you care about and love. During this time, many think of Valentine’s Day as a day we celebrate and confess our love. It’s a day that we also show appreciation to those who goes that extra mile with making sure your needs are heard and met.
Valentine’s Day is a holiday that most would think it’s for couples or people that are in love. I’m sure most of you have received flowers, cards, and even candy on this special day at one time. But this year, I decided that acknowledging someone who you care about is also important.
My daughter’s teacher has been so kind with helping my daughter this year in her class. In the beginning, of the school year, my daughter had a hard time transitioning from kindergarten to first grade. It was a huge jump for her. Academically, she was failing almost of all core subjects. I can’t tell you as a parent how this made me feel. I tried everything to get her interested in school and most of all, interested in learning. I’ve sat with her teacher many times to brainstorm a plan to help her progress in school. I’ll say, it’s so heartbreaking to see your child struggle so much. My daughter’s teacher on her own free will and cost decided to purchase a computer learning program that she heard great success stories about and she thought it would be ideal for my daughter to use.
Normally, the school has a certain state curriculum that the teachers must teach from and all others would be obsolete. -And of course, there is no money in the school budget for these types of programs for extra support. Meanwhile, my daughter’s teacher took it upon herself to purchase this learning software to help my daughter and other children who need that extra reinsurance and guidance.
During progress meetings with her teacher, I learned that she had breast cancer and was a survivor of this disease. I couldn’t help but feel overwhelming thankful for everything she has done for my daughter especially when she is going through her own medical conditions.
So that is when I wanted to do something extra nice for her because, in my heart, I know she deserves and more! When shopping at Walmart the other day, I decided to make her a decorative Valentine’s Day gift basket with my yummy Red Velvet M&M’s®Brookie Bars made with M&M’s® Strawberry. When I was thinking of making something sweet for my daughter’s teacher, I wanted to bake something different than just your average cookies, brownies or cakes. -And that is when I thought of my Red Velvet Brookie Bars. It’s a 3 layered bar that is full of deliciousness! I’ve made them before for my family and they absolutely loved them. This time around, I wanted to add M&M’s® to the ingredients and I’m so glad that I did. These limited time M&M’s® Strawberry are the perfect choice for this special treat. When it comes to yummy homemade baked treats, who doesn’t love them? Fresh from the oven, they just warm my heart. Especially those that are chewy and gooey. I just love them! My Red Velvet M&M’s® Brookie Bars speak for themselves. These happy friends are so delicious! You know what’s, even more, mind-blowing? These scrumptious bars were made from box ingredients. Heck, if it saves you time in the kitchen why not right.
First, I began to mix store bought Red Velvet cake mix as directed from the box in a bowl. Adding eggs, water and oil. I Blended well then set aside.
Next, I opened a box of store bought Fudge Brownie mixture. Any brand would do. Adding the ingredients needed like eggs and oil as directed from the box. Then I placed the bowl aside.
Next, I preheated my oven for 400 degrees then began to add my Red Velvet cake batter to my non- stick square baking dish. Depending on the size of the pan, you will only use half of the batter.
Then I added my Fudge Brownie batter on top of the Velvet Cake batter. Spreading the mix onto cake batter with a fork. If you notice that your brownie mixture is seeping into the cake batter, not to worry, it’s fine.
Lastly, I used premade Chocolate Chip Cookie Dough found in the refrigerated section but you can also pick up dry mixture and they will taste just as good. With the cookie dough, I began to mold it. Large circle shapes then placing them on top of the brownie mixture.
Before placing my baking pan in the oven, I topped off my mixture with M&M’s® Strawberry candies.
These Red Velvet M&M’s® Brookie Bars are just divine! Three of the best desserts all wrapped up in one. So Good! They truly make a statement and command attention. Don’t they?
